This post was originally going to be titled "tastier than takeaway" and feature tonight's gourmet King Prawn Fried Rice, however it was devoured before I could get to the camera.
So instead you have last night's Tuna Patties and Salad which was delicious too and incredibly quick: about 20 minutes from preparation to plate.
To make the patties, I flaked a large tin of tuna into a bowl, added some breadcrumbs whizzed in the mini food processor, a couple of eggs and some herbs, salt and pepper. I rolled the patties lightly in flour then pan fried them. While they were cooking I looked through the crisper and plated up a salad of shredded cos leaves, sliced avocado (the last one we'll have for a while given the spike in prices!), diced cucumber, sliced tomato, and some cubes of sharp and tasty cheddar. I served the tuna patties on top and drizzled on some creamy avocado dressing.
The entire meal for four people would have cost under $10. After a busy day at work it was also a relief to be able to put something on the table so quickly.
